There's that set of taste buds that some people have that respond to
bitter flavors - like Bok Choi. Maybe that's the difference.

Bok choy tastes so sweet to me. I would prefer it over cabbage any day.

But it is hard to trust that any imported bok choy hasn't been treated
with insecticides.
